This 100% Sangiovese is vinified using carbonic fermentation, a technique that keeps the tannin levels low, locks in freshness, and balances acidity.
A little history: Two decades ago Thomas Stolpman discovered what he believes to be “one of the greatest viticultural sites on earth,” a small outcrop of exposed limestone on the edge of the Pacific Ocean, a rarity in Central California. This unique soil type, in conjunction with the utilization of dry farming, forces the vines to dig deep in search of a water source, resulting in smaller, more concentrated and vibrant fruit.
