In 1996, Michel Laroche created Mas La Chevalière, a state-of-the-art winery on the grounds of an 18th-century guesthouse, with the goal of producing wines that truly reflect the diversity of the southern French varietals and terroir. This 100% Cabernet Sauvignon is smooth and easy to drink, full bodied with a balanced acidity. Dark silky fruits lead on the palate—most notably blackberry and plum, followed by earthier flavors of leather, nutmeg, and black tea. The long finish is ideal for braised meats.
