A nephew of Marcel Lapierre – the legendary evangelist for natural wines – Philippe Pacalet took his uncle’s philosophy to heart when he began as a ‘micro-négociant’ in Burgundy at the turn of the century. Use of indigenous yeast in the cellar ensures Pacalet’s wines are like no other. The Pommard shows dark fruits with a fuller body; good acidity makes it a great companion for food and will allow for gentle aging over the next few years.
