Les Equilibristes Picpoul de Pinet

‘Les Equilibristes,’ meaning the tightrope walkers, is a venture of François de Monval, a Parisian wine merchant, and Florent Giroux, a winemaker and oenologist. Together, they make wines from organic grapes that convey the unique terroir and local varietals of its place. Their ‘gastronomic’ Picpoul, which comes from the Languedoc, is richer than the inexpensive Picpoul you often find from the region. Waxy with citrus notes and a touch of salinity, open this with briny oysters or richer poultry dishes.
