Hailing from the Côtes Catalanes, La Colline aux Fossiles is owned by one of the top winemakers in the world—Jean-Marc Lafage. The wine takes its name from the old, weathered fossils mixed in the gravelly soils in the vineyards. Aged partly in new French barriques, it is an outstanding expression of Chardonnay, with exotic fruit and vibrant acidity. Pair this one with succulent Nantucket Bay scallops.
