David Moreau took over his family’s estate on one condition: that he be allowed to farm the vineyards and make the wines to his standards. His grandfather agreed, convinced by David’s grandmother Simone, for whom the ‘Cuvee S’ is named. Scientific precision has given way to lutte raisonnée or ‘reasoned fight,’ signifying that David will only intervene in the vineyards or cellar when explicitly necessary. The ‘Cuvee S’ retains a strong purity of fruit, even with 12 months of oak aging, in addition to a pleasingly earthy character.
