Dry-farmed and biodynamic, grapes from these young vines are fermented spontaneously to allow their terroir-specific characteristics to shine. Bhilar - the Basque translation of the local town of Elvillar - is dedicated low intervention in what is increasingly the cutting edge of Rioja production (namely Rioja Alavesa). Uncork this gem with a wide range of food, but perhaps best served with rustic lamb dishes.
