This “charming” little wine from Amurrio in Spanish Basque Country practically dances out of the glass. Aromatic lemon and green melon accent a backbone of chalky minerality. A blend of Hondarabbi Zuri and a few other local varieties, the wine is fermented in stainless steel and then bottled with some residual carbon dioxide to retain spritz. Perfect alongside a board of tinned fish, olives, and cheese.
