A nephew of Marcel Lapierre – the legendary evangelist for natural wines – Philippe Pacalet took his uncle’s philosophy to heart when he began as a ‘micro-négociant’ in Burgundy at the turn of the century. Use of indigenous yeast in the cellar ensures Pacalet’s wines are like no other. His Gevrey-Chambertin is a medium-bodied affair with strong tannins ideal for meat and other heavier food.
