The June BRIX Mix—La Chavela
After sipping one or two (or maybe three) of these this spring, we knew the La Chavela was bound for a BRIX Mix. Created by one of our favorite Boston bartenders, Gabe Bellegard Bastos, of atlántico, he gives the martini a “South American” twist. Marrying a unique Bolivian brandy called Singani 63, with Amontillado sherry, Lillet Blanc, and a few dashes of grapefruit bitters, it results in a slightly savory, complex martini.
About the name…Gabe, who is also the Bar Director at atlántico, names all their cocktails after beaches, and tries to pick a beach that makes sense with the spirits he’s using. In this case, La Chavela is a beach in Panama. Because Bolivia is not on the Atlantic Ocean, one would have to sail through the Panama Canal to access them.
