Imayo Tsukasa KOI Daigingo Sake
The name of this sake is an ode to the tale of the Niigata prefecture and their “goldfish sake” – a rumor that breweries watered down their product so much that a fish could live in it. Times have certainly changed and the KOI Daigingo is anything but watered down. This un-diluted, 17% abv sake is a powerhouse of umami with notes of tropical fruits and a slight cocoa finish. Think wagyu beef and bold seafood dishes as fantastic pairings to this truly impeccable sake.
